There’s nothing quite like a perfectly grilled steak, but it’s easy to mess up. The secret starts at the store. Look for good marbling – those white flecks of fat throughout the meat. Before it hits the grill, let the steak come to room temperature for about 30 minutes. This ensures it cooks evenly. Season generously with salt and pepper. When grilling, you need high heat. Sear the steak without moving it to get a great crust. For a medium-rare steak, use a meat thermometer: 130-135°F (54-57°C) is your target. The most important step is often skipped: resting. Let the steak rest on a cutting board for at least 5-10 minutes. This lets the juices redistribute, so they end up in your mouth, not on the plate.
