Plant-Based Cooking for Beginners
Switching to more plant-based meals doesn’t have to be complicated or expensive. I started with ‘meatless Mondays’ as a low-pressure way to experiment. The key is to focus on what you can add, not what you’re taking away. Stock your pantry with staples like beans, lentils, chickpeas, and a variety of spices. One of my favorite quick meals is a chickpea stir-fry. Sauté some onions, add canned chickpeas and whatever veggies you have, and season with cumin and paprika. Serve it over rice. It’s filling, nutritious, and takes less than 20 minutes. Start with flavors you already love. If you enjoy tacos, try using lentils or walnuts as a taco filling. You might be surprised at how satisfying and flavorful it can be.
